It has the perfect balance of tartness from the rhubarb and sweetness from the strawberries, all wrapped up in buttery pie dough. If you haven’t made a crostata, it’s a free-form tart made of pie dough filled with a sweet or savory mixture. It’s more forgiving and rustic than a classic pie, and I love to take whatever produce is in season and bake it into a crostata! In the Summer I love to fill crostatas with caramelized onions, garden tomatoes, goat cheese and herbs for a savory version, or whatever ripe berries or stone fruit I have.
