Ingredients
- One medium sized watermelon, about 7 lbs
- Zest and juice of 1 lime
- 1/4 cup fresh mint, chiffonaded (sliced into thin ribbons)
- 1/3 cup crumbled feta

- The Lime: Sub in lemon zest and juice, or a splash of champagne vinegar.
- The Mint: Any soft, tender herb is a great swap. I love basil, and though not an herb, fresh, peppery arugula is a delicious addition.
- The Feta: Crumbled goat cheese is a classic sub. Omit the cheese entirely to keep it dairy-free and vegan.
- The Aromatic + Spicy Additions: Thinly sliced red onion or shallot adds a punchy bite. Chili powder adds subtle heat.
