Lemon + Ginger Green Smoothie

To know me is to know my love for my daily Lemon + Ginger Green Smoothie. I've been making a version of this pup for almost 10 years, she's my old faithful. I originally started making this  as a treat to cool down on hot day when I lived in LA and it just so happens to be packed with lots of fabulous ingredients. I'm *obviously* not a nutritionist but I just feel really good when I drink it, which seems like reason enough to keep it in the rotation. It tastes like something you'd pay $10 for at a smoothie bar or a juicery (fun fact I don't believe in juice) and it comes together with very acceessible ingredients. Spinach, lemon, apple, celery, pineapple, chia or hemp seeds, fresh ginger, and water. Round it out with some yogurt if you're feelin' it. Oh, I'm also obsessed with scaling the recipe up and pouring it into popiscle molds for a v vibrant and even more refreshing treat when it's hot out!

As a note, if you don't have a very high powered blender, first blend the greens with lemon juice and water until completely smooth, then add in rest of ingredients and blend. If you throw everything in at once you may end up with larger pieces or chunks, and we're going for smooth here. A high powered blender like a Vitamix can get the job done. Once blended, add more water and blend again for a more juice-like consistency if desired.

Ingredients
  • 1 cup water
  • 1 and 1/2 cups spinach
  • Juice of 1/2 lemon
  • 1 apple, roughly chopped
  • 2 celery ribs, roughly chopped
  • 1/2 cup frozen pineapple
  • 1/2 teaspoon finely chopped or grated fresh ginger, or more if you like the spicy kick, I do a small knob
  • 1 tablespoon chia, hemp, or flax seeds
  • optional: 1/2 cup roughly chopped cucumber (Peel the cucumber for smoother texture. If using a high powered blender like a Vitamix, keeping the skin on is ok)
Instructions
  1. Blend the water, lemon juice, and greens in a blender until smooth.
  2. Add the apple, celery, pineapple, ginger, and chia or hemp seeds until smooth and to your desired consistency. If you want something closer to a juice you'd buy at a juicery, add more water to thin out and blend again to desired consistency.
  3. Pour into glass and serve.

Let's riff
  • The Greens: Sub in baby kale.
  • The Citrus: Sub in lime or orange (obsessed with adding Cara Cara orange when it's in season)
  • The Apple: Sub in pear.
  • The Frozen Pineapple: Sub in frozen mango.
  • The Seeds: Skip 'em if you don't have 'em.
  • The Protein/ TheCreamy Things: A few spoonfuls of whole milk greek yogurt or nondairy yogurt (I love Cocojune) is a nice way to round it out. I have yet to find a truly flavorless protein powder so I never add it, if you have one you love go for it.

I made this same amazing salad with the following additions: I used a bed of chopped romaine hearts, and squeezed the juice of all the trimmed cara cara oranges, plus 1/2 lemon, added a drizzled of Tupelo honey on top. The herbs: chopped fennel fronds and mint. Everyone went crazy for it!
